Peppermint Choc Tofu Mousse

Breakfast, Lunch or Dinner?! Super easy, delicious Peppermint Chocolate Mousse made with Tofu (you wouldn't know it!) Recipe takes 10 minutes to make for a quick healthy treat.

I found a similar recipe on the net but it was much more complicated, obviously switch what you like in the recipe as its really only 3 ingredients. My children love this as a treat in their school lunch box with muesli and I love it for a weekend "naughty" breakfast.

Recipe:

350grms Soft Tofu

Either melted chocolate to taste or Cocoa powder or Gluten Free,Dairy free choc drops

Peppermint Essential Oil (you could try Wild Orange EO).

Simply place the drained Tofu in the blender, blend for a minute. Add melted choc drops or cocoa powder and a toothpick that has been dipped in your favourite Essential Oil.

Put in the fridge to chill & That is it!!!

Simply serve chilled with your choice of berries, nuts, yogurt chocolate, shaved coconut, whatever takes your fancy.

A friend suggested you chill a tin of coconut cream, place in the fridge to cool. Once it has solidified and cooled, open tin. Place the solidified coconut cream in a bowl and whisk on high. It will make the most delicious "Coconut Cream."
